Honey for Sugar

To substitute honey for granulated sugar in your baking recipes follow these guidelines.

* Use 2/3 to 3/4 cup of honey in place of each cup of sugar.

* Reduce the liquid by 1/4 cup.

* If the recipe does not contain baking soda, add 1/2 teaspoon baking soda for each cup of honey used.

* Reduce the oven temperature by 25 degrees.

How much do I buy?

1 cup graham cracker crumbs = 14 squares
1 cup chopped carrot = 1 large carrot
1 cup chopped onion = 1 large onion
1 cup chopped sweet pepper = 1 large pepper
1 cup chopped tomato = 1 large tomato
1/2 cup diced celery = 1 large rib
3 Tbs. sliced scallion - 1 large scallion
4 tsp. chopped garlic = 1 large clove
4 cups sliced raw potatoes = 4 medium-size potatoes
3 Tbs. lemon juice -= 1 medium lemon

2 cups shredded hard cheese = 8 ounces cheese

No Chives!

If a recipe calls for chives and you have none on hand, substitute half the amount of the green portion of green onions. Make sure to finely chop them.

Nutrasweet vs. Sugar

If you want to use Equal/Nutrasweet instead of sugar if youŽre baking youŽll find this chart helpful.

Equal Packets = Sugar

1 packet = 2 teaspoon sugar
1.5 packets = 1 tablespoon sugar
6 packets = 1/4 cup sugar
8 packets = 1/3 cup sugar
12 packets = 1/2 cup sugar
24 packets = 1 cup sugar

1 whole pouch = 1 pound sugar
1/4 teaspoon = 2 teaspoons sugar

No Sour Cream

If you suddenly find that you are out of sour cream you can
substitute any of the following in your recipe.

** 1 cup plain yogurt

** 3/4 cup sour milk, buttermilk or low-fat plain
yogurt plus 1/4 cup melted butter

**1 tablespoon lemon juice plus 1 cup evaporated
whole milk

Check below to see yields for dry beans to cooked beans.

Large beans (i.e. kidney)
1 cup = 2 to 3 cups cooked
1 lb = 2 cups uncooked = 5 1/2 cups cooked

Small beans (ie navy)
1 cup = 2 to 3 cups cooked
1 lb = 2 1/3 cups uncooked = 5 1/2 cups cooked

Lentils
1 cup = 3 cups cooked

Split peas
