Use this relish with grilled chicken or pork.
Rhubarb Relish
2 cups rhubarb -- finely chopped
2 cups onion -- finely chopped
2 1/4 cups packed brown sugar
1 cup vinegar
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon ground cloves
1/4 teaspoon pepper
Combine all ingredients in a heavy saucepan and cook over medium heat for 30 minutes, or until thickened, stirring occasionally.
Cool and store in the refrigerator
