Itīs easy to get a crisp exterior on your corn muffins and breads.

Use oil (corn is a good choice) and coat the muffin or loaf pan. Place the greased
pan in the oven for about 10 minutes at 350 ensuring that the oil has become hot.

Remove the hot pans from the oven, quickly pour in the batter and return to the oven.
Follow baking instructions from your recipe.

The heating of the oil causes the batter to form a crust immediately when the cool batter makes contact.
